Holiday Breakfast Pancakes Recipe
Ingredients:
- 3 C rolled oats
- 1 T coconut oil
- 1½ C almond milk
- 1 egg
- 1 scoop Vital Proteins® Collagen Peptides
- 1 T cinnamon
- 1 t baking powder
- 1 t. vanilla extract
Optional toppings:
- ⅓ C raspberries
- ¼ C pomegranate
- ¼ C pumpkin seeds
Directions:
- In a food processor, combine all ingredients and blend until smooth.
- In a frying pan add in coconut oil and cook over medium heat.
- Scoop in about 1/3 C of mixture and cook on both sides for up to 5 minutes.
- Remove from pan, add toppings and enjoy!
