Breakfast is the most important meal of the day – as our moms and favorite wellness enthusiasts have taught us over the years. But breakfast doesn’t need to revolve around oatmeal, pancakes, and cereal anymore. Though we’re still very, very big fans of these A.M. staples, many of us wake up wanting something completely different (and just as delicious). Enter: Sweet Potato Toast, which has totally transformed the breakfast game since it started flooding Instagram our feeds.
In an attempt to satisfy both sweet and savory cravings, we dreamt up two versions. Using the veggie as the base, which is first toasted, use avocado or nut butter as your chosen spread. (Or better yet, treat yourself to one of each.) Then, top off your creations with sea salt and red pepper flakes if you’re in the mood for a savory meal, and use bananas and berries if you have more of a sweet tooth.

Sweet Potato Toast Recipe (Savory & Sweet)
Yields 4 Sweet Potato Toasts
Savory Ingredients:
- 2 slices sweet potato, ¼ ” in thick
- 1 avocado, chopped
- 1 scoop Vital Proteins Collagen Peptides
- Juice from ½ lemon
- Sea salt
- Red pepper flakes (optional)
- Olive oil
Sweet Ingredients:
- 2 slices sweet potato, ¼” in thick
- ½ C almond butter, room temperature
- 1 scoop Vital Proteins Collagen Peptides
- Sliced banana
- Sliced berries
- Olive oil
Sweet Potato Toast Directions:
- Lightly brush both sides of sweet potato slices with olive oil.
- Toast slices on high and toast until tender. You may have to re-toast if not fully-cooked.
Savory: Avocado Toast Directions:
- Add chopped avocado, lemon juice and Collagen Peptides to a small bowl.
- Mix together until combined.
- Spread over toast. Sprinkle with sea salt and red pepper flakes.
Sweet: Almond Butter Toast Directions:
- Add almond butter and Collagen Peptides to a small bowl.
- Mix together until combined.
- Spread on toast and top with berries.
