Matcha Cookies
Yields 20 Matcha Cookies
Ingredients:
- 3 C almond flour
- 1 t baking soda
- ¼ T baking powder
- 1 T cinnamon
- 3 scoopsVital Proteins® Matcha Collagen
- 1 t vanilla extract
- ½ C almond milk
- ¼ C maple syrup
- ¼ C coconut oil (melted)
- 1 egg
- 1 C dark chocolate (melted)
Directions:
- Preheat oven to 350° F. In a large mixing bowl add all dry ingredients (except dark chocolate) and mix together. In a separate bowl, add in the wet ingredients and whisk until well combined.
- Combine both wet and dry ingredients and mix together with a wooden spoon.
- Once mix is ready, prepare a baking sheet lined with parchment paper. Roll mix into balls (1 tablespoon worth) and press down to make them flat.
- Bake for 10-12 minutes and let cool on a cooling wrack. While the cookies are cooling, place the dark chocolate and 1 tsp. of coconut oil in a sauce pan on low heat until melted.
- Dip half of the cookie into dark chocolate mix and place back on the baking sheet. Let cookies cool in the fridge to harden the chocolate for about 20 minutes.
- Take out of the fridge, and enjoy!
