Oatmeal Cookie Protein Bites

Yields about 16 protein bites

Ingredients:

  • 1 C whole rolled oats
  • ¼ C pecans
  • ½ C raisins
  • 3 T chia seeds
  • 2 scoopsVital Proteins Collagen Peptides
  • ½ C creamy almond butter
  • 3 T maple syrup
  • 1 t cinnamon
  • ⅛ t nutmeg
  • ½ t sea salt

Directions:

  1. Add the ingredients to the bowl of a large food processor.
  2. Process until the mix is chunky and sticky, stopping to scrape down the sides as needed. It should hold together well when pressed between two fingers.
  3. Use a cookie scoop to portion the bites evenly.
  4. Roll them between your palms to form a ball shape.
  5. Place them on a lined sheet pan and into the refrigerator for 30 minutes to set. Keep chilled until serving.
