It’s the surprise inside that really gives these cookies a little something extra.

Pumpkin Pie Cookies

Yields 10-12 Pumpkin Pie Cookies

Cookie Ingredients:

  • 1¼ C almond flour
  • ¼ C arrowroot powder
  • ½ t baking soda
  • 2 scoops Vital Proteins Marine Collagen
  • 1 t cinnamon
  • 1 t pumpkin pie spice
  • ¼ t sea salt
  • ¼ C coconut oil (softened)
  • ¼ C almond butter
  • 1 egg
  • 1 t vanilla extract
  • 2 T maple syrup
  • 3 T coconut sugar

Filling Ingredients:

  • 1 C cashews (soaked in hot water for 20 minutes)
  • 2 T maple syrup
  • 3 T pumpkin puree
  • 1 t pumpkin pie spice

Directions:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Add all dry ingredients (except coconut sugar) into a bowl and whisk together until combined.
  3. In a separate bowl, mix in the coconut oil and almond butter until softened.
  4. Add in the egg, maple syrup, coconut sugar and vanilla extract. Whisk until smooth.
  5. Slowly add in the dry ingredients and mix.
  6. In a food processor, combine the filling ingredients and blend until creamy.
  7. Divide the dough into balls and roll in between palms to make smooth.
  8. Take each ball and press flat. Place 1 teaspoon of filling in the center of the cookie.
  9. Wrap the cookie dough around it until it's completely covered and roll until smooth again. Place on the cookie sheet and flatten the cookie down with your palm. (Filling might come out, which is fine!)
  10. Bake cookies for 10-12 minutes. Let cool & enjoy!
