No Bake Cookie Dough Balls Yields 24
Ingredients:
- 4 T coconut oil, melted
- 1 C coconut sugar
- 1 C unsweetened coconut milk or milk of choice (i.e. almond milk)
- 1 T vanilla extract
- 1¼ C coconut flour
- 1 T tapioca starch
- ½ C chocolate chips
- Pinch of sea salt
- 4 scoopsVital Proteins® Collagen Peptides
Directions:
- In a mixing bowl, add coconut sugar, coconut oil, vanilla extract, sea salt, and mix to combine.
- Add coconut flour, tapioca starch, Collagen Peptides, and mix to combine.
- Stir in chocolate chips and slowly mix in milk.
- Scoop the dough onto a lined baking sheet using a small ice cream scoop.
- Roll dough into balls and place on baking sheet.
- Refrigerate for one hour or until firm. You can also refrigerate overnight. Enjoy!
5-Ingredient Peanut Butter Cookies
Yields 12 cookies
Ingredients:
- 1 C peanut butter (+ ½ t salt if unsalted)
- 1 C coconut sugar
- 2 scoops Vital Proteins® Collagen Peptides
- 1 egg
- ½ t vanilla
Directions:
- Preheat the oven to 350 degrees.
- In a bowl, whisk all ingredients together until well combined.
- Lightly grease two cookie sheets with a neutral oil or cooking spray. 4. Roll the cookie dough into 12 spheres, placing them at least 2 inches apart on the cookie sheet.
- Using the back of a fork, press down on each cookie vertically and horizontally to form the classic peanut butter cookie waffle texture on top.
- Bake for 8-9 minutes or until the edges lightly brown. Let cool, then enjoy!
Chocolate Collagen Overnight Oats
Ingredients:
- 1 C rolled oats
- 2 scoopsVital Proteins® Chocolate Collagen Peptides
- 1 C of almond milk
- 1/2 t vanilla extract
- 1/4 t salt (optional)
- 2 T Sugar free maple syrup
- 1/8 C chia seeds
Toppings:
- dark chocolate chips
- strawberries
- bananas
- peanut butter
Hot Chocolate Brownie Mug Cake
Ingredients:
- 1/2 Cup gluten free flour (1:1 baking flour)
- 1/4 Cup cocoa powder
- 1 servingVital Proteins® Chocolate Collagen Peptides
- 1/2 Tsp baking soda
- 1/8 Tsp salt
- 2 Tbsp maple syrup
- 1 Tsp vanilla extract
- 1/3 Cup almond milk
- 1/8 Cup avocado oil (any neutral oil works)
- 1/4 Cup chocolate chips (top with extra)
- 1/4 Cup marshmallows (top with extra)
Directions:
- In a mug, combine all dry ingredients except for the chocolate chips and marshmallows. Mix together until well-combined.
- Next, slowly mix in the wet ingredients until it creates a batter-like texture. (Depending on the flour, you might need to add in extra almond milk to help with the consistency.)
- Lastly, add in the chocolate chips and marshmallow and stir until they are evenly mixed in.
- Place the mug of batter into the microwave for 2 minutes. Remove from the microwave, top with more marshmallows and chocolate chips and enjoy!
Peppermint Hot Chocolate
Ingredients:
- chocolate squares
- mini candy cane
- 1 scoop of Vital Proteins Collagen Creamer® in Peppermint Mocha
- 6 oz milk of choice
- 1 t cacao power
- whipped cream
Directions:
- Warm milk of your choice.
- Place chocolate squares and candy cane in mug.
- Pour warm milk over chocolate and peppermint to melt.
- Add cacao powder and Vital Proteins Collagen Creamer® in Peppermint Mocha
- Mix with spoon or frother.
- Top with whipped cream and enjoy!
No-Bake Chocolate Peppermint Truffles
Yields 6 truffles
Ingredients:
- ½ cup oat flour
- ¼ cup cocoa powder
- 1 serving ofVital Proteins Collagen Creamer® in Peppermint Mocha
- ¼ cup unsweetened almond milk (vanilla recommended)
- 1 tbsp honey
- 3 tbsp mini chocolate chips
Directions:
- Pour the oat flour, cocoa powder and Vital Proteins Collagen Creamer® in Peppermint Mocha to a bowl and mix until evenly distributed.
- Add the almond milk to the bowl and combine with a fork or whisk until integrated.
- Next, add the honey to the dough, stirring until well combined.
- Finally, pour the mini chocolate chips into the bowl and stir until integrated.
- Using a spoon, scoop the dough into 6 spheres, molding it as needed with your hands. Place the spheres on a refrigerator safe plate or tupperware.
- Refrigerate the truffles for 30 minutes and enjoy! Option to top with powdered sugar or additional Collagen Creamer. Store in the refrigerator throughout the week.
