Treat Mom With These No-Bake Birthday Cake Bars

Looking for a sweet way to treat mom this year? Sammi Brondo, MS, RD (@veggiesandchocolate) created this No-Bake Birthday Cake Bar recipe perfect for celebrating mom this Mother’s Day. It also makes a tasty treat any time of year (we know we’re making it more than once)!

No Bake Birthday Cake Bars

Ingredients:

Directions:

  1. Line a loaf pan with parchment paper.
  2. In a large bowl, add almond flour, Vanilla Collagen Peptides and salt. Mix to combine.
  3. In a separate bowl, add cashew butter, maple syrup, almond milk and cake extract. Mix to combine.
  4. Add the wet ingredients into the dry ingredients, mixing as well as you can (the mixture will be hard to stir). Once combined, use your hands to mix well, forming the mixture into a cohesive, thick dough.
  5. Fold sprinkles into the mixture, saving some to add on top.
  6. Place the mixture into the lined loaf pan. Use your hands to mold dough together tightly and flatten on top. Add remaining sprinkles on top.
  7. Put in the refrigerator to harden for at least 30 minutes. Cut into squares and enjoy!
